Ingredients

  • 4 slices bacon (cut into ½-inch thick pieces)
  • 1 small onion (diced)
  • 1 red bell pepper (diced)
  • 1 large sweet potato (peeled and diced into ½-inch cubes (approx 4 cups cubes))
  • 2 cups kale leaves (roughly chopped)
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • kosher salt and freshly ground black pepper (to taste)
  • 4 eggs
  • 1 green onion (sliced)

Steps

  1. Cook the bacon in a large skillet over medium heat until crisp. Scoop it out and leave the fat in the pan.
  2. Add the onion and bell pepper and cook 1 minute.
  3. Add the sweet potato and spices. Cook 10 to 12 minutes, stirring often; cover for the last few minutes so it gets tender.
  4. Stir in the bacon and kale until the kale wilts.
  5. Make 4 little wells, crack an egg into each, and cook until the eggs are how you like them. Season and top with green onion.

Good to know

For meal prep, I'd store the hash on its own and cook a fresh egg each morning (it takes 3 minutes), or pack it with a cooked egg on top.
