Ingredients

  • 1 pound sweet potato (peeled and diced into ½-inch cubes (about 1 medium to large potato))
  • 1 tablespoon olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon cumin
  • kosher salt and freshly ground black pepper
  • 8 ounces bacon
  • 1 pound breakfast sausage (mild, medium or spicy, your choice)
  • ½ large onion (diced)
  • 1 green bell pepper (deseeded and diced)
  • 2 cloves garlic (minced)
  • 12 large eggs
  • ⅓ cup milk (dairy or dairy-free)
  • optional: shredded cheese and sliced green onion for garnish

Steps

  1. Heat the oven to 400°F. Toss the sweet potato with the oil and spices on one sheet pan. Lay the bacon on a second pan.
  2. Roast both until the bacon is crisp and the potatoes are tender, 15 to 25 minutes. Crumble the bacon.
  3. Meanwhile, brown the sausage in a skillet and scoop it out. Cook the onion and bell pepper in a little of the fat for 4 to 5 minutes, then add the garlic.
  4. Spread the potatoes, bacon, sausage, and veggies in a 9x13-inch pan.
  5. Whisk the eggs and milk, pour it over the top, and bake 25 to 30 minutes, until the center is set.
