All Butter Pie Crust
Recipe by Sally McKenney at Sally's Baking.
Ingredients
- 2 1/2 cups (313 g) all-purpose flour, plus more as needed
- 2 teaspoons granulated sugar
- 1 teaspoon salt
- 1 cup (226 g) cold unsalted butter, cubed
- 1/2 cup (120 ml) ice water, plus more as needed
Steps
- Whisk the flour, sugar, and salt in a large bowl. Add the cold butter cubes.
- Cut the butter into the flour with a pastry cutter, two forks, or a food processor until it looks like coarse crumbs with pea-size bits of butter.
- Drizzle in the ice water 1 tablespoon at a time, stirring after each one. Stop when the dough starts to form big clumps. It should feel moist but not wet.
- Turn the dough out onto a floured counter and gently press it into a ball. Don't overwork it.
- Cut it in half and flatten each half into a 1-inch-thick disc.
- Wrap each disc tightly and chill for at least 2 hours (up to 5 days).
- Roll out the chilled dough from the center outward, turning it as you go, and use it in your pie recipe.
Notes
Keep everything cold. Cold butter is what makes the crust flaky.
Freeze the wrapped discs for up to 3 months. Thaw overnight in the fridge.
I use this crust for my chocolate pie.
