Bev's Chocolate Pie
Recipe by Diana Barnes at Allrecipes.
Ingredients
- Filling:
- 2 cups white sugar
- 5 tablespoons unsweetened cocoa powder
- 1/4 cup all-purpose flour
- 1 (12 fl oz) can evaporated milk
- 1 teaspoon vanilla extract
- 4 egg yolks
- 1/4 cup butter
- 1 (9-inch) unbaked pie crust (I use my all butter pie crust)
- Meringue:
- 4 egg whites
- 1/4 cup white sugar
Steps
- Heat the oven to 350°F.
- Whisk the 2 cups sugar, cocoa, and flour together in a saucepan. Stir in the evaporated milk and vanilla.
- Beat the egg yolks and stir them into the chocolate mixture.
- Add the butter and heat, stirring the whole time, just until the butter melts.
- Pour the filling into the unbaked pie crust. Bake 35–40 minutes, until it's just set.
- For the meringue, beat the egg whites until foamy. Slowly add the 1/4 cup sugar and keep beating until stiff peaks form.
- Spread the meringue over the pie, all the way to the crust. Bake 8–10 more minutes, until the top is golden.
Notes
Use a glass, metal, or ceramic bowl for the egg whites. They whip up best in a clean, grease-free bowl.
