Ingredients

  • olive oil spray
  • 3 chicken breasts (diced into 1-inch pieces (24 ounces))
  • 1 egg white (beaten)
  • 2 tablespoons corn starch
  • 1 1/4 teaspoon kosher salt (divided)
  • 1 head broccoli (cut into small florets)
  • 2 teaspoons sesame oil
  • 2 cups brown rice (cooked)
  • 2 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 teaspoon seasoned rice vinegar
  • 1 teaspoon sesame oil
  • 2 scallions (sliced)
  • 1 teaspoon black and white sesame seeds (or as desired)

Steps

  1. Heat the oven to 425°F. Dip the chicken in the egg white, coat it in cornstarch, and season with ¾ teaspoon salt. Spread it on a sprayed sheet pan and bake.
  2. Partway through, flip the chicken and add the broccoli to the other half of the pan with 2 teaspoons sesame oil and the rest of the salt. Bake until the chicken is cooked and the broccoli is tender.
  3. Whisk the honey, sriracha, rice vinegar, and sesame oil. Toss the hot chicken in it.
  4. Split the rice, chicken, and broccoli between 4 containers and top with scallions and sesame seeds.
