Ingredients

  • 3 8 ounce boneless skinless chicken breasts (diced into 1/2 inch cubes)
  • 1 teaspoon olive or canola oil
  • 1/2 cup diced red onion
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 teaspoon kosher salt
  • 1 cup canned low sodium black beans (rinsed and drained)
  • 1/2 cup buffalo sauce (Franks)
  • 3 cups cooked brown rice
  • 1/2 cup part-skim cheddar cheese (or dairy-free cheddar)
  • 1/4 cup chopped scallions

Steps

  1. Cook the onion in the oil over medium-low heat until it starts to brown, about 5 minutes.
  2. Add the black beans, paprika, cumin, and salt and warm through, 3 to 4 minutes.
  3. Meanwhile, cook the chicken in a very hot oiled skillet until browned and done, about 5 minutes. Toss it with the buffalo sauce.
  4. Build 4 bowls: ¾ cup rice, beans, cheese, and chicken. Top with scallions.
