Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion (diced)
  • 1 red bell pepper (diced)
  • 1 jalapeno pepper (de-seeded and diced)
  • 3 garlic cloves (minced)
  • 1 ½ pounds ground turkey
  • 2 tablespoons tomato paste
  • 2 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoon paprika (or smoked paprika)
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 (28-ounce can) fire-roasted diced tomatoes
  • 2 (15-ounce cans) red kidney beans (drained and rinsed)
  • 2 cups chicken broth

Steps

  1. Heat the oil in a big pot over medium-high. Cook the onion, bell pepper, and jalapeño 4 to 5 minutes, then the garlic for 30 seconds.
  2. Add the turkey and break it up until cooked through.
  3. Stir in the tomato paste, spices, and salt for 1 minute.
  4. Add the tomatoes with their juice, the beans, and broth. Bring to a boil, then simmer uncovered for 30 minutes, stirring now and then.
  5. Serve with toppings like avocado, cheese, green onion, or sour cream.
