Times are estimates based on the steps.

Ingredients

  • 1 1/2 lbs tomatoes (Roma, vine-ripe, or heirloom), cored and quartered
  • 1/2 medium yellow onion, roughly chopped
  • 1 green onion, ends trimmed
  • 2–3 cloves garlic, finely chopped
  • 2 jalapeños, diced (keep the seeds for more heat)
  • 1 big handful cilantro (about 1/2 cup)
  • Juice of 1/2 lime
  • Pinch of cumin
  • Pinch of sugar
  • Salt, to taste

Steps

  1. Put everything in a blender or food processor.
  2. Pulse until it's as chunky or smooth as you like. Taste and add salt.
  3. Chill for 1–2 hours (or overnight) so the flavors come together.
  4. Serve with chips, on tacos, nachos, or chili.

Notes

Roma tomatoes give the best texture.

Great on my adobo chicken tacos.
